Preheat oven to 350 degrees. Cook frozen vegetables according to package directions and drain. Set vegetables aside. In a large bowl mix together eggs, soup, cheese, mayonnaise and onion. Stir vegetables into mixture until coated. Spoon into a greased 2 quart casserole dish. Top with crumbled Ritz crackers and dot with butter. Bake for 30-40 minutes until brown.
