     Broccoli Cheese Soup

Ingredients
1 small onion
1 clove garlic
1 lb. fresh broccoli
1/4 lb. mushroooms, chopped
4 T. butter
1 T. cooking oil
3 T. flour
2 cups chicken broth
1 1/2 cups milk
 
1/2 tsp. salt
2 cups shredded sharp cheese (I use Velveeta)

Instructions
In heavy soup pot, saute onion, garlic, broccoli and mushrooms in the butter and oil, stirring for 5 to 8 minutes or until tender. Stir in flour and whisk until smooth. Gradually whisk in broth, then add milk and salt. Cook until thick. Add cheese and stir until melted. Heat to steaming, not boiling.
