     Curried Mutton

2kg mutton on the bone
3 cloves of garlic
1 onion
4-6 tbsp Jamaican all spice
handful of new potatoes
1 tbsp thyme
punch of chopped coriander
1 scotch bonnet
lamb stock
1 tbsp butter
corn flour (if needed)

sauté finely chopped onions for 5 minutes. Add minced garlic, allspice, and chopped scotch bonnet and sweat for another minute.
1 tbsp butter. Brown the mutton. Add enough lamb stock to cover the meat. Bring to a boil and then simmer for at least 1.5 hours - ideally longer.
Skim oil off the top. Thicken if needed.
