     Artichoke Pasta Sauce Recipe

1/4 cup light virgin olive oil
2 cups chopped onion
2 cloves garlic minced
1/2 tsp oregano
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basl
fresh parsley (I forget to put in and doesn't make much difference)
2 small jars marinated artichokes (Cento brand)
2 large cans crushed tomato
parmesean cheese (on side if desired)

Drain and reserve marinade. Heat olive oil, ass onions, basil, oregano, garlic, salt, pepper, and artichoke marinade. Saute for approximately 10 minutes until onions soft. Add tomato and simmer for 30 minutes. Add artichokes, parsely (and parmesean cheese I don't add here) and cook for 5 minutes. Serve over pasta.
