Lightly grease or spray an 8-9 inche square pan. Mix gelatin and water in a microwavable bowl. Microwave for about 1 1/2 minutes. Stir to dissolve completely. Add marchmallows and microwave for 1 minute, until they are almost metled. Stir until smooth. Pour into prepared pan. They should be a frothy white layer on top of the clear jello layer. Refrigerate until set (about 45 minutes). Loosen edges with knife dipped in water. Roll up tightly and cut into slices (about 1/2 inch think). Make 3 or 4 batches using different colors for a pleasing variety and a pretty plateful.
