     Chicken Crispy Baked Breasts

panko bread crumbs - 2 cups
swiss cheese - shredded small 1/2 cup
olive oil - 3 tbls
salt - kosher
mayonnaise - 1/2 cup
pepper - freshly ground black
milk - 1/4 cup
thyme leaves - fresh finely chopped
chicken - 4 boneless breasts (pounded flat is nice for even cooking)

Heat oven to 400F. Line baking sheet with aluminum foil and fit with a wire rack (lightly oiled to prevent sticking). Place panko, cheese, oil, season with salt & pepper, combine together evenly in a shallow dish. Place mayonnaise, milk and thyme in another shallow dish. Season with salt and pepper and wisk together to combine.
Cut each chicken breast in half crosswise and pound flat. Season both sides of chicken with salt and pepper. Dip chicken in mayo mixture and coat both sides then dip into panko mix. Place breaded chicken on baking sheet and bake at 350F until golden brown, about 30-40 minutes.
