     Ravioli & Zucchini Lasagna

Ingredients
2 med. zucchini (about 1 lb. total), cut lengthwise into 1/4 in. thick slices
1 pkg. (26oz.) frozen lg. cheese ravioli
3 t. olive oil
1 sm. onion, chopped
8 oz. lean ground beef (90% fat free)
1 jar (26 oz.) tomato-basil sauce
1 c. shredded part-skim mozzarella cheese
1/4 c. hreshly grated Parmesan cheese
 

Instructions
Preheat oven to 375 degrees F. Line cookie sheet with paper towels. Grease 2-qt. ceramic baking dish.
Heat lg. covered saucepot of water to boiling over high heat. Add zucchini & cook 5 min. with tongs or slotted spoon, remove zucchini to prepared cookie sheet to drain. Return water to boiling. Add ravioli & cook until ravioli rise to the top.
Meanwhile, in 3-qt. saucepan, heat 2 t. oil over med. heat. Add onion & cook 8 to 10 min. or until tender & lightly browned; transfer to sm. bowl. In same saucepan, in remaining 1 t. oil, cook beef over med.-high heat 3 to 4 min. or until browned, breaking up beef with side of spoon. Stir in tomato sauce & onion; het to boiling.
