     Quiche - Lord Richard

Ingredients
eggs - 4-5 large
milk - 1 C
creme fraiche - 1 C
cheese - 1 C grated gruyere
ham or bacon - 1 C chopped and cooked
nutmeg - pinch
sald and pepper - pinch
herbs de prove - large pinch
chives - fresh sprinkled on top to serve
 

Instructions
Start with a deep dish pie crust (frozen - Marie Callendar's is the one I used this time) - oh, and I coated its surface with a fig jam just to give it a special kick. Thoroughly whisk together the eggs, milk and herbs; add in the cheese and meat, stir and pour into the pie shell. Cook in preheated 350F oven on a cookie sheet (or something to catch any overflow that might occur) for about 40 minutes. Test so that it does not jiggle like there's still moisture there. Let it sit in the cooling oven for 15 minutes or so before serving.
