     Moosewood Lasagne

Ingredients
2 cups Ricotta Cheese
2 beaten eggs
salt and pepper
10 oz frozen spinach
dash of nutmeg
1 lb shreded mozzarella (or whatever you have on hand)
1/2 cup grated parmesan or romano cheese
9 x13 pan
 

Instructions
Spread a little sauce over bottom of pan. Cover with 1/3 of the noodles. Put a blotch of the filling here and there. (Use 1/2 the filling.) Sauce (1/3 remaining sauce)1/2 the mozzarella hither and thither. Another 1/3 of the noodles. Remaining filling, followed by Sauce (another 1/3), which gets covered by remaining mozzarella.
