     Fresh Apricot Deep Dish Pie

Ingredients
2 1/2 c peeled apricot halves
1/4 c water
1 1.2 c sugar
1/2 T nutmeg
1/4 t salt
2 T unsalted butter or margarine
1/4 c slivered almonds, toasted, optional
1 egg
1 T water
 

Instructions
Combien apricot halves and 1/4 c water in a saucepan. Bring to a boil. Stir in sugar, nutmeg and salt. Spoon into a buttered 1 1/2 qt round baking dish. Dot with butter. Sprinkle with the almonds. Shape Pie Pastry into a ball on a lightly floured surface. Flatten ball to thickness of 1/2 inch. Roll into an 11 inch circle. Roll the pastry carefully around a rolilng pin and unroll over the pie filling. Fold edge under and flute. Cut vents in the top. Brush with a mixture of egg and 1 T water. Bake at 400 degrees for 15 minutes. Reduce oven temperature to 350 degrees and bake for 30 minuts until golden brown.
