     Strawberry Cheesecake Bites

Ingredients
8 oz. cream cheese (softened)
1/3 cup powdered sugar
2 tsp. lemon juice
1/2 tsp. lemon peel
1 lb. whole strawberries
8 graham crackers - finely chopped (2/3 cup)
 
Instructions
Mix together cream cheese, sugar, lemon juice, and lemon peel until smooth. Set aside.
Hollow out tops of strawberries to 3/4 inches. Gently fill each with cream cheese mixture.
Roll tops into graham cracher crumbs.
Arrange on serving platter and refrigerate.
