     Cheese Enchiladas

Ingredients
1 tablespoon vege oil (or olive oil)
1 cup chopped onion
2 tsp minced garlic
1 tsp chilli powder
1 tsp oregeno
1 tsp cumin
1/2 tsp salt
1/8 tsp pepper
1 can of tomatoes and chillis (like rotel)
 
1 small can of tomatoe sauce
1-1/2 cups cheddar shredded
1-1/2 cups monteray jack cheese shredded
12 tortillas
cilantro (optional)
sliced black olives (optional)

Instructions
Pre-Heat oven 350deg. Heat oil in sauce pan over medium heat.
Add onions, garlic and chilli powder and cook stirring until onions are tender about 5min. Stir in next 9 ingredients. Heat to boiling, reduce heat and simmer uncovered until thickened, about 30min
Combine cheese in bowl. Dip each tortilla into tomatoe mixture to coat both sides. Spoon about 2 TBLS cheese on each tortilla and roll up placing in pan.
Pour remaining sauce over enchiladas. Top with remaining cheese and cilantro and black olives. Bake uncovered for 20 minutes.

guacamole, sour cream, salad, corn chips
