Pre-Heat oven 350deg. Heat oil in sauce pan over
medium heat.

Add onions, garlic and chilli powder and cook
stirring until onions are tender about 5min. Stir
in next 9 ingredients. Heat to boiling, reduce heat
and simmer uncovered until thickened, about 30min
|
|
|
Combine cheese in bowl. Dip each tortilla into
tomatoe mixture to coat both sides. Spoon about 2
TBLS cheese on each tortilla and roll up placing in
pan.
|
|
|
Pour remaining sauce over enchiladas. Top with
remaining cheese and cilantro and black olives.
Bake uncovered for 20 minutes.
