     Ginger Squash

Ingredients
2 ½ lb squash. Hubbard, Butternut or Acorn.
2 tbs butter
2 tbs brown sugar
1 tsp ground ginger
Salt
Pepper
Nutmeg
 

Instructions
Cut squash in half and scoop out the seeds. Place in oven at 400 degrees and bake 40 mins or until tender. Can also microwave until tender. Puree or mash. Add butter sugar and ginger. Add salt and pepper to taste. Add freshly ground nutmeg if you have it. Reheat. Notes- Can be made in advance. Can be made in larger quantities.
Christine has been making this dish for quite a few years now, and it is one of her most requested dishes. The adults have always loved it but the children used to be 'encouraged' to try some, but invariably ate little of it-that is until now. Now, everyone has discovered it and indeed the comment was made-'Why didn't you tell me I would like this! not that long ago from one of our 20-somethings. So, now Christine is required to make a triple batch to ensure there is enough to go round. Enjoy
