     Hamburger Soup

Ingredients
1 1/2lb ground beef
1 large Onion
One 28oz can of tomatoes-no salt added
2 cups water
3 cans consomme-low salt
1 can tomato soup -if you like-I don't use it now
4 large carrots chopped
1 bay leaf
3 stalks of celery chopped
 
Parsley chopped in small chunks
1/2 tsp thyme
Pepper
8 tbsp barley (optional --and not for the peanut allergy sufferers)

Instructions
Brown the ground beef in a medium saucepan and remove the excess fat from the pan before proceeding. (Not that I ever had had to do that with beef from South Main Grocery-so don't skimp on the quality of the meat) Add the onion to the ground beef and cook until onions are translucent. Add the tomatoes, carrots, celery, thyme and pepper to the beef and brown for an additional 5 minutes. Add the water, consomme, tomato soup, bay leaf (whole) and barley. Cover and simmer for 45 minutes (minimum. Allow to sit for best results.
A great dish for young children and hungry adults. Keeps for hours - and is very satisfying after a winter play day with good bread and butter.
