     Black Bean and Mango Salsa

Ingredients
1 red onion, diced
1 cup ice water
1 mango, peeled, pitted, and diced
1/2 red bell pepper, seeded and diced
1/2 cup fresh or thawed frozen corn kernels
1/2 cup canned black beans, rinsed, and drained
2 Tbsp. fresh lime juice
1/4 tsp. salt
 

Instructions
In small bowl, cover the onion with the ice water and soak about 30 minutes.
Drain, dry well.
In a medium bowl, mix the onion, mango, bell pepper, corn, beans, lime juice, and salt.
