     Mexican Manicotti

Ingredients
1 t oil
2 t oregano
14 manicotti or cannelloni shells
1 lb hamburger
1 T chili powder
1 large onion, chopped
4 cloves crushed garlic
1/2 t salt
16 oz refried beans
 
1 large green pepper, chopped
1/4 c chopped fresh parsley
1 c Sweet and Savory Salsa
7 oz can tomato sauce
2 c grated monterey jack or cheddar cheese

Instructions
Cook pasta to package directions for least amount of cooking time. Drain pasta and immerse in cold water until cool. Drain well. Spray 9x13 with Pam and preheat oven to 350 degrees. Heat oil in large skillet and fry beef with onion, garlic, chili powder, oregano and salt. Cook, stirring often to break up. Stir salsa with tomato sauce. Let meat cool enough to handle. Fill each shell with meat and fit snugly into 9x13. Pour salsa mixture over top. Cover with foil and bake 45 minutes. Uncover, sprinkle with cheese and bake uncovered until cheese is melted and shells are hot, about 20-25 minutes longer. Serve with green salad and extra salsa.
