Preheat oven to 450 degrees. Lightly spray 12-cup popover or jumbo muffin pan with nonstick spray.

Combine milk, flour, eggs, salt and cayenne pepper in blender; blend until smooth. Pour into large bowl.

|
Stir 1 cup cheddar cheese and the scallions into batter. Spoon 1/3 cup batter into prepared popover cups. Sprinkle evenly with remaining 1/2 cup cheddar cheese.

|
Bake popovers 15 minutes. Reduce oven to 375 degrees and bake until golden brown, 8-10 minutes. Serve hot.
