Cut each strawberry from base to hull, taking care
not to cut in half or leave whole if desired. Place
egg white in a bowl and whisk. Place sugar in a
bowl. Dip half the strawberry into egg white, then
in sugar to coat.
Place strawberries onto the side of six glasses (or
serve whole). Place strawberry liqueur and pineapple
juice into glasses. Top with champagne. Serve.
