     Chilupa Grande

Ingredients
1 lb. dry pinto beans
1 pork roast (3 lbs.), fat trimmed
7 c. water
1/2 c. chopped onions
2 garlic cloves, minced
2 to 3 tsp. ground cumin
2 T. chili powder
1 T. salt
1 tsp. dried oregano
 
1 can (4-oz.) chopped green chilies

Instructions
Place ingredients in large kettle. beans do not need to be soaked. bring to a boil; reduce heat & simmer, covered, about 3 hours or until beans & roast are tender. Remove roast; cool slightly. return meat to kettle. cook, uncovered, until thick, about 30 minutes. serve with taco sides & over fritos.
