In a large saucepot, cover sweet potatoes with cold
water. Bring to boil over med-hi heat and boil
until tender, about 30 minutes. Cool, peel, and
mash.
Cut 1 stick into equal pieces and place in bowl with
potatoes. Add sugar, salt, and vanilla and mix
well. Stir in milk, 1 TBS at a time until the
mixture is moist and no longer stiff.
Preheat oven to 350 F and mist a 7x11 baking dish
with cooking spray. Put potatoes in dish. Melt 1
stick of butter. Mix nuts, four, and brown sugar.
Sprinkle nuts over potatoes. Drizzle butter over
nuts.
Bake until browned. 35-40 minutes.
