Heat oven to 375 degrees. Grease muffin cups, or
use paper or foil baking cups.

Beat eggs and brown sugar in a medium sized bowl
until smooth. Whisk in milk and oil. Stir in wheat
bran cereal. Let soak 10 min.

Thoroughly mix oat bran, all-purpose flour, and
baking powder in a large bowl. (I mix the first
five ingredients and put it in the fridge
overnight).

Add soaked bran mixture and fold in with a rubber
spatula just until dry ingredients are moistened.
Scoop batter into muffin cups. Bake 20-25 min or
until brown and firm in the center. Turn out onto a
rack to cool.
