     Pecan crunch

Ingredients
3 eggs (whites only)
1/2 tsp. baking powder
1 c. Sugar
1 c. Pecans, chopped
11 single graham crackers. (About 1 cup)
1 tsp. vanilla
1/2 pt. whipping cream
 

Instructions
Beat egg whites and baking powder until stiff. Add sugar while beating. Mix pecans and crushed graham crackers and fold into egg mixture. Add vanilla. Bake 350 for 30 mins. Cool and spread whipping cream on top. Chill at least 4 hours. Double to make 9x 13.
