     Sweet Chilli Sauce

Category   Sauces
Sub Category   None

Ingredients
3-4 large cloves garlic, peeled
1 medium onion, red or white chopped in quarters
3 red peppers(or Jalapeño or Serrano) with seeds if you want it hot
1/2 cup sugar
3/4 cup water
1/4 cup white vinegar
Pinch of salt
1 tbsp corn starch
2 tbsp. water

Instructions
Puree everything except the water and cornstarch in a blender. Mix the corn starch and water until smooth. Transfer the pepper mixture to a saucepan and whisk in the corn starch mixture. Bring to the boil, stirring often. Allow to boil for 1 minute only stirring continually and remove from heat. Once it is completely cooled the pepper flecks should be suspended in the mixture.
Store in a tightly closed glass jar in the fridge. Lasts several months--if you can resist using it on everything!
