     Rum Roast with Gravy

Ingredients
3 lb pork roast
1 1/2 tsp ginger
1/2 tsp pepper
1/4 tsp cloves
1/8 tsp garlic
2 bay leaves
1/4 C rum
3/4 C brown sugar
2 T cornstarch
 
1 C condensed chicken broth
1/4 C lime juice
1/2 C rum
pork drippings

Instructions
Mix together cloves,ginger,pepper,garlic,bay leaves. Rub onto roast.
Bake in a 325 degree oven for approximately 2 hours. The last 1/2 hour mix together 1/4 C rum, and 3/4 C brown sugar. Place onto roast.
For gravy, mix together; drippings, 1/4 C rum,lime juice,chicken broth,cornstarch. Boil until thickened stirring constantly.
Serving Suggestions
This is great with mashed potatoes.
