     Ruth's Split Pea Soup

Ingredients
16 ounces green split peas rinsed
1 meaty ham bone
1 1/2 cups sliced onions
1 teaspoon salt
1/2 teaspoon pepper
1 cup diced clery
1 cup diced carrots
1 cup diced potatoes
cubed bread, butter, garlic and parsley for croutons
 

Instructions
1. Cover 16 ounces green spit peas in 2 quarts of water. Simmer gently 2 minutes. Remove from heat, cover and let stand for 1 hour.
2. Add one meaty ham bone, onions, salt,and pepper. Bring to a boil then reduce to a simmer for 1 1/2 hours, stirring occasionally.
3. Remove bone and cut off meat, dice it and return to pot.
4. Add celery, carrots and potatoes and cook slowly uncovered 30-40 minutes. Don't forget to serve with croutons seasoned with garlic and parsley and browned in butter.
