     Salad Dressing Citrus Vinaigrette

Ingredients
shallot - 1 finely chopped
olive oil- 3/4 cup
vinegar - 1/4 cup champagne or white wine
lemon juice - 3 Tbsp
orange juice - 2 Tbsp
lemon zest - 1/4 finely grated
salt - kosher
pepper - freshly ground
 
Instructions
Combine first six ingredients in a small jar, season vinaigrette to taste with salt and pepper. Shake to blend.
Vinaigrette can be made on week ahead. Cover and chill. Shake before using. Triple recipe and make a large batch.
