     Bruschetta of Carmelized Onion and Goat Cheese

Ingredients
6 slices of focaccia or french bread
1.7 oz. of basil flavored olive oil
3 cloves of garlic
2 yellow onions, diced 1/4 inch
Salt & Pepper to taste
1 oz. California dried tomatoes
1 tsp. fresh thyme
4 oz, goat cheese - from a local goat
 

Instructions
Preheat oven to broil. Cut focaccia into 1/4 inch slices. Brush lightly with basil olive oil and set aside.
In a saute pan, heat one oz. basil olive oil over medium high heat to the smoking point. Add the minced garlic and saute to golden brown. Add the chopped onion and reduce heat to low. Sprinkle with salt and pepper and cookj for 15 minutes, stirring occaionally to prevent scorching. If desired, add sun dried tomatoes and cook for one more minute. Remove from heat and set aside.
Place oiled bread into the broiler and toast until golden brown. Spread the toasted bread with the onoin mixute. Crumble the goat cheese on top of eac slice, sprinkle with thyme and pepper and return to over for 3 minutes. Serve hot or warm.
