     Goat Cheese Stuffed Tomatoes

Ingredients
4 Large fresh tomatoes
4 ozs. goat cheese
2 tbsp Olive Oil
1 tbsp chopped buttered red roasted peppers
4 tbsp bread crumbs
1 tbsp from fresh basil leaves
Kosher salt and pepper to taste
 

Instructions
Pre-heat broiler. Slice of tops of tomatoes and hollow out remaiming seeds. In a bowl mix goat cheese, chopped red pepper together. Spoon an equal amount of mixture into each tomato. Place upright in a baking dish. Top each tomato with bread crumb and basil, drizzle with olive oil and season with salt and pepper.
Place under broiler for 5 to 10 minutes until bread crumbs are slightly brown.
