Coat the bottom of pan with olive oil and then heat a few tablespoons of grapeseed oil for added taste.

Once pan is hot to the point that water droplets will dance rather than splatter, begin to cook frozen catfish on both sides until thawed.
|

|
Take and mix all other ingredients (except for butter) in a large plastic bag. Melt butter in a large bowl. Take thawed and partially cooked fillet out of pan and soak it in melted butter. Drop the fillet in plastic bag with spice mixture and shake until the fillet is covered well.

Place back in pan and continue to cook on both sides until done.

Serve with your choice of wine. Goes well with rice or noodles.
