|
cut each croissant in to 4 pieces, lightly season
with salt and pepper and dry fry in a pan until
lightly toasted. Remove and set on plates. place prosciutto over the 4 pieces of croissant on each
plate.

|
crack 8 eggs in to the pan an add a few small knobs
of butter. Put on medium heat and whisk.

|
|
When nearly cooked, remove from heat and season with
salt and pepper. Add cream and mix. Back on the heat
for 30 seconds.

|
Add chives and mix before serving
