     Eggs Benedict

Ingredients
4 croissants
8 eggs
25g butter
1 tbsp cream
chopped chives
salt and black pepper
 

Instructions
cut each croissant in to 4 pieces, lightly season with salt and pepper and dry fry in a pan until lightly toasted. Remove and set on plates. place prosciutto over the 4 pieces of croissant on each plate.
crack 8 eggs in to the pan an add a few small knobs of butter. Put on medium heat and whisk.
When nearly cooked, remove from heat and season with salt and pepper. Add cream and mix. Back on the heat for 30 seconds.
Add chives and mix before serving
