     Fresh Peach Dessert

Ingredients
3 C. sliced fresh peaches
1 C. sugar
1 Tbsp. lemon juice
grated rind of 1/2 lemon
1/2 tsp. almond extract
1 and 1/2 C. flour
3 tsp. baking powder
1/2 tsp. salt
1/3 C. shortening
 
1 egg
1/2 C. milk

Instructions
Place the peach slices in an 8x8x2-inch pan. Combine the sugar, lemon juice, lemon rind, and almond extract. Sprinkle over the top of the peaches. Set the pan in a 400 degree oven while preparing the top. To make the topping, mix the flour, baking, powder, and salt. Cut in the shortening like pie crust. Add in the egg and milk. Stir just until moistened, then drop by Tbsp. on top of the peaches. Sprinkle sugar over the topping. Bake 35-40 min. at 400 degrees.
