     Cinnamon Apple Coffee Cake

Ingredients
1 3/4 C sugar divided (can use Splenda)
1/2 stick margarine softened
1 ts vanilla
6 oz fat free cream cheese softened
4 egg whites
1 1/2 C all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon
 
3 c chopped apples (peel them first!)
fat free cooking spray

Instructions
Pre-heat over to 350%. Spray springform or deep round pan with cooking spray.
Beat 1 1/2 C sugar, margarine, vanilla,& cream cheese at med speed until well blended. (about 4 min) Addd egg white approx one at a time and mix well after each addition.
Combine dry ingredients. Flour, backing powder, & salt. Add flour mix gradually to creamed mixture at low speed until well blended.
Combine 1/4 C sugar with the cinnamon. Take 2 T. of cinnamon mix and add to chopped apples mixing enough to cover apple pieces. Stir apple pieces in to batter. Spread batter into pre-sprayed pan. Then cover the top of batter with remaining cinnamon mixture. Bake 1 hr or until cake pulls away from sides of pan. Cool cake completely on a wire rack. Cut with a serrated knife.
