This is a recipe from Anne Lindsay's SMART COOKING. It was a gift
from Joan and Christine many years ago and remains my most used cookbook. We
have an apple tree that produces good tasting but rather sad
looking apples so each October finds us busy making applesauce. I
discovered this cake and it's a favourite, especially for John, who
loves anything made from apples.
It also provided an important chemistry lesson for Marjorie and me
during one of our December Cookie Baking Days. Hint- do not
forget to add the baking soda
