     Garden Pizza

Ingredients
Base
3 cups cooked and cooled brown rice
1 cup grated Mozzarella
1/2 cup sesame seeds
1 egg, beaten
Sauce
3 Tbsp butter
3 Tbsp flour or use cornstarch or thickener if you don't want to use flour
1 Tbsp vegetable bouillon powder or a variety of herbs and spices for flavour
 
1 1/2 cups milk

Instructions
Base. Combine all 4 ingredients.Spread onto the bottom of a greased 9 x 14 baking pan. Bake at 450 degrees for 15 minutes.
Sauce. Melt butter. Add flour and bouillon powder to make a paste. Slowly add milk. Cook until thick and smooth. Pour over crust.
Topping. Cover with any vegetables you like and the season. I've used broccoli, zucchini, peppers, cauliflower, carrots, mushrooms, tomatoes. It works well to slightly pre-cook the firmer vegetables before adding to the pizza. Top with another 1 cup of mozzarella cheese. Bake at 400 degrees for 15 minutes. Allow to cool slightly before cutting.
This is a great vegetarian dish an d perfect to take to potluck dinners. I got this recipe from my friend Lois--a physio that I shared an apartment with during my very first job. Lois moved to California, where all food trends started back in the early '80s. The recipe was successfully modified by Joan to make it gluten-free for her nieces when they were visiting us in Vancouver.
