     Italian Chicken Bake

Ingredients
2 boneless skinless chicken breasts
1/4 cup shredded mozzarella cheese
2 thin slices prosciutto
1 teaspoon extra virgin olive oil
1/4 cup italian breadcrumbs
4-6 tablespoons ricotta cheese
 

Instructions
Preheat oven to 350°F. Coat shallow baking dish with nonstick cooking spray.
Cut slit (about 3 inches long) a few inches deep in the thickest part of each breast. Do NOT cut all the way through the breast. Fill each breast with 1.2 the contents of the cheeses and a slice of prosciutto. Close together with a toothpick and put in a baking dish. Brush olive oil over stuffed chicken breasts and sprinkle evenly with breadcrumbs.
Cover with foil; bake 30 minutes. Remove foil; cook 10 minutes more or until golden brown. Drizlle with pan juices.
