1 to 2 lb chicken breast chopped into bite size pieces
1 package taco seasoning
1 can black beans (do not use seasoned)
2 cups mexican cheese
1/2 can Winn Dixie sweet corn, drained
1 cup Pace medium salsa
green onions to taste
1 tomato chopped
1 cup rice, uncooked
Tortillas or tortilla chips
any other taco toppings you may like lettuce, sour cream, etc
Instructions
1. Cook rice according to package directions.
2. Cook chicken in a small amount of oil in skillet. Add taco seasoning and cook according to package directions, adding proper amount of water.
3. Cook black beans in separate pot on stove till texture desired. Add 1 cup of cheese and the salsa. Stir until combined
4. Put rice on bottom of 8 in x 8 in baking dish. Pour beans over rice in dish, then add corn.
5. Add chicken on top of corn. Sprink remaining cheese over top. Sprinkle green oinions over cheese.
6. Bake in 375 degree oven until cheese is sufficiently melted. Take out of oven and sprinkle with tomatoes on top. Wait 1 to 2 minutes and then serve with tortillas, tortilla chips, lettuce, sour cream.

Suggestions
Beau doesn't like the hot tomatoes, so could be served cold instead of on top. We LOVE this dish. Tried it with ground beef, not nearly as awesome.
