     Eggs Benedict

Ingredients
12 tbs unsalted butter, room temp
6 large egg yolks
1/2 cup boiling water
2 tsp lemon juice
pinch of pepper
1/4 tsp garlic salt
1/4 tsp salt
1 tsp sriracha
2 eggs, poached
 
2 english muffins, toasted
1 slice canadian bacon

Instructions
1. In a heatproof bowl over a pan of barely simmering water set on medium heat, whisk the butter and egg yolks until smooth
2. Slowly add the 1/2 cup boiling water to the mixture, whisking constantly
3.Heat the mixture until it is thickened about 10 minutes, whisking constantly then remove from the saucepan
4. Gently whisk in the lemon juice, pepper, garlic salt, salt and sriracha
