12 tbs unsalted butter, room temp
|
|
6 large egg yolks
|
|
1/2 cup boiling water
|
|
2 tsp lemon juice
|
|
pinch of pepper
|
|
1/4 tsp garlic salt
|
|
1/4 tsp salt
|
|
1 tsp sriracha
|
|
2 eggs, poached
|
|
|
|
2 english muffins, toasted
|
|
1 slice canadian bacon
|

Instructions |
|
|
1. In a heatproof bowl over a pan of barely simmering water set on
medium heat, whisk the butter and egg yolks until smooth
|
|
|
2. Slowly add the 1/2 cup boiling water to the mixture, whisking
constantly
|
|
|
3.Heat the mixture until it is thickened about 10 minutes, whisking
constantly then remove from the saucepan
|
|
|
4. Gently whisk in the lemon juice, pepper, garlic salt, salt and
sriracha
|
