     Baked Zucchini

Ingredients
2 medium sized zucchini
1/4 cup shredded parmesan
1/4 cup panko
1 tbs olive oil
1/4 tsp salt
pepper to taste
 
Instructions
1. Preheat oven to 400 degrees
2. Slice zucchini into 1/4 inch think rounds and toss with oil
3. Combine panko, parmesan, salt and pepper and coat both sides of the zucchini and top with the extra mixture
4. Bake for 22 to 27 minutes
