1 1/2 lbs Lobster (or a mix of shrimp, scallops, crabmeat)
4 rolls Ritz Crackers, crushed
1 large onion
1/4 c fresh mushrooms (optional)
3 lg cloves garlic
3/4 c light cream (reserve 1/4 cup)
2-3 sticks butter
1/4 c parmesan cheese
1/4 tsp garlic powder
1/4 tsp onion powder
Pepper
Instructions
Saute onions, garlic & mushrooms in 2 Tbsp butter. Transfer to mixing bowl. Add Ritz crackers, parmesan, garlic & onion powder & pepper. Add cream just until stuffig is moist and sticks together.
Pour 1/4 cup cream on bottom of casserole dish. Add lobster and seafood. Cover with stuffing and bake 350 for about 20 min covered, 15 min uncovered.
