Place chicken breasts on a board. Remove skin and press cajun seasoning on outside of the chicken flesh. Cover well.
Cook on a hot greased barbecue or a very hot frying pan until chicken is done - turning often. Chicken should have a slightly blackened outside coating.
Serve with avocado mayonnaise and a side salad.
