     Homemade Whole Wheat Tortillas

Ingredients
2 1/2 C. Whole Wheat Flour
1/2 C Coconut Oil, melted
1tsp. Salt
1C Warm Water
 

Instructions
Mix flour and salt together.Add coconut oil and mix together until crumbles or pieces form. Slowly add water mixing well after each addition. Form into dough and knead, add just a little sprinkling of flour as needed until not sticky. Form into a log and seperate into 14 equal sections. Gentle roll into balls and roll out each ball with a rolling pin until tortilla shape is achieved. Cook on a medium heat grill for about 1 and 1/2 minutes on each side, no oil required. Use right away or store in plastic wrap. Only keeps for a few days before getting moldy, unless kept in the fridge. I like to make homemade refried beans and put that and grated cheese on top, fold it and heat on the grill, yum! It is one of my kids favorite meals. Serve with salsa or plain Greek yogurt for dipping -)
