1. Rinse the rice and drain.....
Place it in a saucepan and cover with water.....
Boil the rice for 5 minutes and drain
2. Return the rice to the saucepan and add the milk, cream, sugar and
salt.....
Add the vanilla seeds and pod and bring just to a boil and then
turn down to low and cover, leaving it ajar
3. Allow the pudding to simmer, stirring often for 30 to 35
minutes....
The pudding should be creamy and the rice should be very soft
4. Remove the saucepan from the heat and remove the vanilla
bean......
Stir in the butter and 1/2 of the sugar and add more to taste
