     Mexican Style Chicken Soup

Ingredients
1 tablepoon olive oil
1 large yellow onion (diced)
2 cloves of garlic (chopped)
1 jalapeno (seeded, chopped)
1 teaspoons of chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 quart low sodium broth
1 1/4 pound tomatos (diced)
 
1, 4 1/2 ounce can green chilies
1, 15 ounce can of hominy
1/2 teaspoon sale
2 cups chicken
1/3 cup cilantro
1 avacado (optional)

Instructions
In large pot, heat oil over meadium-high. add onion, garlic and jalapenos. cook and stir until onions are translucent (5mins) add chili powder, oregano and cumin, cook for 1mins
stir in broth, tomatos, chilies, hominy, and salt. bring to boil, reduce heat to simmer for 20mins add chicken, simmer (10mins) and add cilantro
serve with lemon wedge avacado slice
