     Old Virginia Applesauce Cake

Ingredients
1 1/2 C. applesauce
1/2 C. shortening
2 C. sugar
1 egg
2 1/2 C. flour
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. all-spice
 
1 C. chopped raisins
1/2 C. nuts
2 tsp. soda
2/3 C. boiling water

Instructions
Cream shortening and add sugar gradually. Add beaten egg and applesauce. Sift flour and measure. Use a little of same flour to sift over fruit and nuts. Sift remaining flour with salt and spices. Dissolve soda in boiling water. Then add flour mixture alternately with the water to the creamed mixture. Add floured raisins and nuts. Pour into cake tins or bake in a mold, greased and floured. Bake for one hour at 350 degrees.
Caramel Frosting- Melt 2 Tbsp. butter. Add 3 Tbsp. milk or cream, and 1/2 C. brown sugar. Boil vigorously for 1 min. Remove from heat. Add 1/2 C. confectioners sugar and beat well. Cool slightly. Add 1/2 tsp. vanilla, 1/2 C. confectioners sugar, beat well. If too thick, add more milk. Frosts one 8 or 9-inch layer cake.
Serving Suggestions
Cake can be baked in a 9x13 pan. One and one-half frosting recipes will cover it.
