     Uncle ben's heart healthy Tex mex rice

Ingredients
2 bags uncle bens boil bag whole grain brow rice
1 1/2 c corn kernels
10 oz shrimp, peeled and drained
1 1/2 c chopped fresh tomato
1/4 c fresh lime juice
3/4 to 1 t chili powder to taste
1 t ground cumin
3/4 t salt
1/2 t garlic powder
 
1/4 t black pepper
2 T fresh cilantro finely chopped
1 ripe avocado, peeled and cut into cubes

Instructions
Prepare rice as instructed on package. When done, place rice in large serving bowl and cool slightly. While rice is cooking, heat in medium skillet costed with cooking spray over medium high heat. Add corn and sauté for 2 minutes. Add shrimp sauté for 3 minutes. Add the sautéed corn and shrimp to the rice and toss in the tomato.
In small bowl, combine the lime juice with the seasoning( chili powder through black pepper). Drizzle the seasoned lime juice over the rice mixture and stir well to combine. Add cilantro and avocado and toss very gently. Serve at room temperature.
