     Thai Fried Quinoa

Ingredients
1 cup quinoa
1 cup coconut milk
1 cup veggie broth
Chopped green onion
1 Tbsp. ginger
2 tsp. minced garlic
1 cup frozen peas
1 cup pineapple
1/4 cup cilantro
 
1 Tbsp. lime juice
2 Tbsp. soy sauce

Instructions
Toast quinoa in pan. Combine milk and broth, mix. Bring to a boil, let simmer, cove and cook for 15-20 minutes.
Saute green onion, ginger and garlic. Add peas, pineapple and cilantro.
Add quinoa, cook till crisp.
Finish with lime and soy sauce.
