1 cup quinoa

1 cup coconut milk
|

1 cup veggie broth
|

Chopped green onion
|

1 Tbsp. ginger
|
|
2 tsp. minced garlic
|

1 cup frozen peas
|
|
1 cup pineapple
|
|
1/4 cup cilantro
|
|

1 Tbsp. lime juice
|
|
2 Tbsp. soy sauce
|
|

Instructions |
|
|
Toast quinoa in pan. Combine milk and broth, mix. Bring to a boil,
let simmer, cove and cook for 15-20 minutes.

Saute green onion, ginger and garlic. Add peas, pineapple and
cilantro.
|
|
|
Add quinoa, cook till crisp.
|
|
|
Finish with lime and soy sauce.
