One orange, peeled and segmented
|
| |
Lemon, halved and juiced.

Instructions |

In one bowl, put in segment. Peel avocado, segment, place in bowl.
|

In a different bowl, Add 2 Tbsp. olive oil, 1 Tbsp. red wine vinegar,
pinch salt and pepper to pan with lemon juice. Simmer dressing in
microwave.
|
|
|
|
While simmering, add spinach to bowl with avocado and orange.
|
|
|
|
Add dressing to top. Toss and serve.
|
