2 tablespoons butter

1/2 yellow onion, chopped

1/2 green pepper, chopped

1 can cream of mushroom soup
|

1 can cream of chicken soup

1 can rotel chopped tomatoes with green chiles

2 chicken breasts, cooked and shredded

3 cups cooked rice (i use success brown rice)

2 cups cheddar cheese

Instructions |
|
|
|
cook onion and pepper in butter until soft. add soups and tomatoes (with juice). stir in chicken.

in a greased 13x9 pan, layer 1/2 the rice, 1/2 the chicken mixture, 1/2 the cheese. repeat layers.

bake uncovered about 45 minutes at 350 degrees.
