     Roasted Veg Power Food Soup

Ingredients
one squash
lg onion
6 large carrots
1 turnip
4 stalks of celery
garlic cloves
any other chopped veg you have on hand, eg. sweet potato, yam
Extra Virgin Olive oil
sea salt
 
ground pepper
spices

Instructions
Put all in large roasting pan with about 1/4 c EVOO (extra virgin olive oil) sprinkle with ground black pepper and kosher or sea salt and spices of your choice. Add a large can of tomatoes (drain first) and reserve the juice. Or add the juice at this time too, I do. Loosely cover pan with tin foil
In large soup pot put 2 litres of fat free chicken broth. Add the drained tomato juice. Add roasted veggies to soup pot. Purée the soup with stick blender or in mixer. You can skip this step if you like the broth with the veggies chunky in the soup. Heat soup mixture till hot.
