     Tomato Soup (dairy free)

Ingredients
1/2 cup butter
1 large onion
20 oz can whole tomatoes
1/3 cup vermouth or cooking wine
1 T sugar or stevia
salt and basil to taste
 

Instructions
Saute onion in butter until golden. Combine tomatoes, vermouth, sugar and onion mixture in crock pot. Cook on low for 5 to 6 hours. Let cool. Puree in batches until you get desired texture. Add basil and salt. Keep warm in crock pot until you serve. Top with bacon, cheese or sour cream.
note-I usually double this recipe to make it stretch.
